Sometimes it’s hard to wake up in the morning. It’s easy to stay in bed a few minutes longer, or easy to hit the snooze button, or easy to decide that your workout isn’t worth it this morning. Sometimes it helps to have breakfast already planned out, so that when you get out of bed you don’t have to make any decisions. What’s extra nice is when you already have breakfast made (or mostly made). Enter chia pudding: an easy, quick breakfast that makes waking up a joy.

vanilla chia overnight pudding (vegan, gluten free)
3 tbsp chia seeds (I like this brand)
12oz unsweetened vanilla almond milk
1 tsp vanilla

1 tsp cinnamon
1 tbsp raw cacao nibs (Navitas makes my favorites)
3 tbsp flaked coconut

In a small bowl or a glass, mix together the chia seeds, almond milk, and vanilla. If you would like a sweeter pudding, add some stevia or other sweetener. I added a bit of my favorite protein powder so that this would be a high protein breakfast before my lifting session. Mix all ingredients together and then cover and let sit overnight.

In the morning, the chia seeds will have absorbed the flavor and taste of the liquid around them, puffing up to create a pudding. Add any toppings that you like (here, cinnamon, cacao, and coconut) and enjoy!
