I love a good breakfast. Blueberries, a banana, and some chunky almond better? Sign me up.

Some people think this isn’t enough food. I disagree entirely. This is the perfect way for me to start my day – fruit to boost my blood sugar and kick start my day, healthy 1-ingredient almond butter that gives me a bit of protein and some fat to hold me over through my morning cardio. I like to start my day beautifully.

It’s about 300 calories for this breakfast. But I’d rather have 300 calories of delight than an oily reheated cheese Danish from Starbucks (320 calories) or an egg McMuffin (300 calories) or a glazed cake donut from Dunkin Donuts (290 calories).

The old myth is that a calorie is a calorie is a calorie. That’s simply not true. 300 calories of fruit and vegetables will nourish and sustain you so much more than 300 calories of sugary fried dough.

So this breakfast? Simple. 2 tablespoons of organic 1-ingredient crunchy almond butter. One sliced banana. 1/2 cup of fresh blueberries. Sometimes I garnish the banana and almond butter with dark cocoa powder or cinnamon, or even a tiny drizzle of honey if I’m feeling truly decadent. That’s all. That’s heaven.

It’s time to focus on nourishment and delight instead of quick and easy. This breakfast was quick and easy, yes (probably took under 2m to prepare) but I spent about 15 minute savoring it, loving the taste and texture of each bite. I took time to focus on my own delight – I feel more grounded and better prepared to take on the world.

What do you delight in for breakfast?
