I love pancakes. I love eating pancakes, and making pancakes, and sharing pancakes with friends and family. Pancakes are quick and easy and delightful, as well as being one of the easiest things to make gluten free.

Gluten Free Mini Banana Oat Pancakes
3 tablespoons gluten free oats
4 tablespoons almond milk
1/2 ripe banana, mashed
1 egg, beaten
Heat up a griddle or nonstick pan.
In a small bowl, mix together the almond milk and oats. Microwave for 30 seconds, then mix with the mashed banana and the beaten egg. Mix it very well.
Pour large spoonfuls of the batter onto your pan of choice, once it’s hot – for me, this made about 12-14 silver dollar pancakes.
I made 4 individual stacks of 3 pancakes each and placed a banana slice between each layer, then almond butter and a banana slice on the top (plus cinnamon). It makes everything very pretty and fun, as you can see!
I hope you enjoy these pancakes! I think they would also be great as protein pancakes with fewer oats and a bit of protein powder, or with more banana and less almond milk, or any number of other ways to modify the recipe.
