Hummus is one of my favorite summer snacks. It’s light, refreshing, and versatile, and can top chicken, tortilla chips, or a spoon with equal ease. I’m always looking for new ways to enjoy hummus, so I’m always testing new flavors and combinations throughout the summer.
This time, I tried roasted red peppers combined with spicy Sriracha for a tangy, Asian-inspired hummus that has just enough heat to keep your mouth watering for more.
Try it out.
Gluten Free, Vegan Spicy Roasted Red Pepper Hummus
2 cups garbanzo beans
1/2 cup roasted red peppers
1 tbsp Sriracha, or to taste
1 tbsp olive oil
1 tsp lemon juice
Salt, to taste
Process ingredients in food processor until smooth. If a creamier texture is desired, add tahini, additional olive oil or Greek yogurt (if that fits with your dietary needs or preferences). Serve however suits your fancy!
I hope you enjoy this hummus! I left mine a bit chunkier, as you can see – I like it with a bit of texture. You could definitely make it creamer and play around with other additional flavors, as well. I served mine with rosemary flackers (flaxseed crackers) and the rosemary added such a complex touch to the flavor.
Enjoy! What’s your favorite summer snack?
