gluten free, vegan apple carrot ginger bites via aparfait


These soft, chewy treats are straight up amazing. I made a whole tray (11 bites, but it should make 12) and promptly ate 7 of them. The best part? The whole recipe is 100% clean, vegan, gluten free (with the right oats) and tastes delicious.

I’ll admit: these are some ugly treats. They’re lumpy and weird and carroty and the bits get burnt in the oven. They also happen to be delightful. These might not be the treats that you bring to people’s houses. But these are the treats you can totally eat half of the tray and not feel guilty or bloated. So make them!

Gluten Free, Vegan Apple Carrot Ginger Bites

Flax/Chia Egg:
1 tbsp ground flax seeds
1 tbsp ground chia seeds
4 tbsp boiling water

1/2 a large apple, grated
2 large carrots, grated
1 tbsp olive oil
1 tsp vanilla

4 tbsp oat flour or ground oats
2 tbsp plain oats
1 tsp stevia
1 tsp cinnamon
1/2 tsp ginger
1 tsp baking soda

1/4 cup candied ginger
1/4 cup chopped almonds

Preheat the oven to 425.

First, mix the ground chia & flax seeds, then add 4 tablespoons of boiling water. Mix until it becomes a slurry and leave in the refrigerator until you need it.

Grate the apple and carrot and mix with the vanilla and olive oil. In a separate bowl, mix together the oat flour, oats, stevia, spices and baking soda.

It’s optional, but I highly recommend that you add either 1/4 cup of candied ginger or 1/4 cup of chopped almonds – it adds an amazing texture and flavor!

These are 100% clean, and they taste so good! The carrots and the apple go together beautifully, and the ginger sets off the natural sweetness of the apple. Of course, using stevia as a natural sweetener doesn’t give you any nasty sugar cravings after you have these, and the fiber in the fruits and veggies fills you up. I will admit that I ate half of the tray as my lunch. I will also admit that I didn’t feel bad at all – each one of these has fewer than 60 calories (assuming you didn’t add the almonds) and packs 50% of your daily dose of vitamin A! Adding almonds would up protein and healthy fats a bit, too.

Nice! I’ll try that. My friend gave me a great verbal recipe for Korean pancakes today. He is a GF veggie, and these are vegan as well.
Soak some mung beans for an hour or so. Whir them up in the blender, then stir in some grated carrot, green onion slices, juliened peppers, and kim chi if you have it (otherwise sliced cabbage). Fry like a pancake and eat with vinegar-soy-ginger-chilli sauce. DONE!
