a simple breakfast

Breakfast is my favourite meal of the day. I eat breakfast all day long – but to be fair, my idea of breakfast isn’t quite what other people think of. I’ll have homemade crepes, packed with protein and fiber. I’ll have a rice cake topped with nut butter. I’ll have a bowl of yogurt with fruit (although for the next ten days dairy and I aren’t seeing each other, so none of that!). I don’t eat cereal. I don’t have poptarts. I don’t eat any of the pre-prepared breakfasts that so many people reach for.

I don’t think that there are very many pre-prepared foods that give you a good nutritional profile; I like to avoid preservatives and added sugars in my foods whenever possible. So for me, breakfast isn’t a quick get up and go thing, it’s an experience. The way you start your day holds sway over the rest of it, too.

So here’s what I had for breakfast this morning: a chopped banana with almond butter and cinnamon. Three ingredients: banana, almonds, cinnamon. I love that. I love it when my meal has fewer ingredients than I have fingers. So simple and delightful, and the perfect way to start a day. It’s also vegan and gluten free!

There’s no recipe for this, you just chop up a banana, microwave some almond butter, spoon it over the banana and top with cinnamon. It doesn’t have very much protein, but that’s okay with me – I don’t need to have a ton of protein first thing in the morning. It does have great micronutrients from the banana and almond butter, including manganese and magnesiums, both of which keep your bones healthy and strong so you can enjoy all of the activities you delight in. It’s also high in fiber and healthy fats, which help keep you full and give you a feeling of satiety until your next snack or meal.
