These are awesome pancakes! They’re packed with protein and healthy ways to get all of your necessary nutrients – plus, they’re gluten free.

4 oz GF oats, coarsely blended
1 oz coconut flour
1 oz potato starch
1/2 tsp baking soda
Pinch salt

3 medium bananas, mashed
1/2 cup plain greek yogurt
1 tablespoon coconut oil
1 tsp apple cider vinegar
1 tablespoon agave syrup (or to taste)
1 tsp almond extract (optional)

Mix the oats and the wet ingredients and let them sit for at least half an hour, then combine with the rest of the dry ingredients.

Add your choice of milk to thin if necessary – whether you need it depends on your yogurt and bananas.

Serves 4, about 350 calories per serving. They’re great topped with almond or peanut butter and a tiny drizzle of honey!
